The idea/concept is the development of fermented turmeric powder and products based on the same, having Nutraceutical/pharmacological and cosmetic value known that the fermentation of turmeric is highly beneficial to enhance the content of curcuminoids, the bioactive content in it. Conventional turmeric fermentation utilizes fungi or bacteria or their consortia to act on slurries of turmeric powder & followed by drying to obtain powders with enhanced curcuminoid content. Alternatively, the slurries extractions use solvents to recover relatively pure curcuminoids. The proposed process applies an innovative approach to fermentation that uses turmeric, which reduces the time, effort and energy needed for drying. Also, this process employs a probiotic class of lactobacilli, which enhances the curcuminoid content in turmeric, nutritional value and health benefits.
