This invention is about a complete vegan mayonnaise formulation containing
encapsulated oil powder using chick-pea protein isolate as wall material.
Currently, 90% of the mayonnaise sold in our country is eggless type.
Companies use milk solids as an emulsifier to replace eggs in formulations.
100% vegan mayonnaise having zero egg & zero milk solids is not produced in the country. As an alternative, we propose chick-pea protein isolate-based vegan mayonnaise with healthy vegetable oils like sesame and groundnut oils in the encapsulated form to suppress the smell of raw oils in the final formulations. Our formulation will have permitted stabilizers and emulsifiers also.
Existing mayonnaise formulations do not use healthy oil choices like sesame and groundnut. Mainly all the brands uses sunflower oil. None of the technologies disclosed has encapsulated oil powders. Encapsulation of oil helps in suppressing the oil smells and undesirable tastes. Encapsulation also helps in slow release of fatty acids during digestion.Moreover nobody uses chickpea protein isolate as an emulsifier with encapsulated oils.
